Ingredients for 3 servings:

6 eggs (3 yolks and 6 whites)

1 lean shredded chicken breast

1 tomato

1 head of mozzarella

A few broccoli florets

A few basil leaves

1 clove of garlic

1 tablespoon of olive oil

Salt, pepper and saffron

Preparation: Beat the egg whites with turmeric and salt until stiff, then gently fold in the egg yolks to make a smooth and fluffy batter. Pour the mixture into a hot pan greased with olive oil. Add the mozzarella slices, broccoli, tomatoes, shredded chicken and cook over low heat until the cheese melts. Add basil leaves before serving.
